I made these look festive for the 4th of July. You can always add different types of sprinkles to these to match whatever theme you're going for; or you can leave the sprinkles out entirely. You do you.
These can be made gluten-free and vegan, or just regular if you prefer.
Ingredients:
1/2 cup butter, melted. *You can use vegan butter or coconut oil*
1 tbsp vanilla extract
2 large eggs (I prefer free-range). *You can use vegan egg substitutes*
2 cups flour. *I used King Arthur brand for this one*
2 cups light brown sugar
1 tsp baking powder. *Add 1 tsp xanthan gum for GF version*
1-2 cups chocolate chips *I used Enjoy Life brand*
Optional: 1/2 cup sprinkles or M&Ms
Directions:
Preheat oven to 350 and grease baking pan (I used 9x13)
Melt butter in microwave for 30 seconds. In a large bowl, mix the butter with the vanilla extract and eggs with a whisk.
Whisk in the baking powder (and xanthan gum, if using)
Mix in the brown sugar followed by the flour. Finally, mix in your chocolate chips and/or sprinkles.
Spread the mixture into the baking dish. Spray your hands with cooking spray and press the mixture down evenly throughout so it is flat on top.
Bake for about 20 minutes or until the edges begin to turn golden. These will come better if they are slightly under-baked rather than overdone.
Let cool, slice and share!
