Ingredients:
1 stick butter, melted (can use vegan butter or coconut oil)
2 eggs
2-3 very ripe bananas
2/3 cup white sugar
1.5 tsp vanilla extract
1 tsp baking soda
1 tsp xanthan gum (omit if using regular flour)
1 and 1/2 cups GF flour
1/2 cup chocolate chips (I use Enjoy Life vegan dark choc chips)
Directions:
Pre-heat oven to 350 and line a 12-cup muffin tin with paper liners.
Whisk together the melted butter and sugar. Mix in the eggs, vanilla and mashed bananas.
In a separate bowl, whisk together the dry ingredients.
Combine dry and wet ingredients; fold in the chocolate chips.
Divide batter evenly into the 12 muffin cups.
Bake on center rack for 25 minutes or when a fork comes out clean.
