Gluten-Free Banana Chocolate Chip Muffins


Ingredients:

  1. 1 stick butter, melted (can use vegan butter or coconut oil)

  2. 2 eggs

  3. 2-3 very ripe bananas

  4. 2/3 cup white sugar

  5. 1.5 tsp vanilla extract

  6. 1 tsp baking soda

  7. 1 tsp xanthan gum (omit if using regular flour)

  8. 1 and 1/2 cups GF flour

  9. 1/2 cup chocolate chips (I use Enjoy Life vegan dark choc chips)


Directions:

  1. Pre-heat oven to 350 and line a 12-cup muffin tin with paper liners.

  2. Whisk together the melted butter and sugar. Mix in the eggs, vanilla and mashed bananas.

  3. In a separate bowl, whisk together the dry ingredients.

  4. Combine dry and wet ingredients; fold in the chocolate chips.

  5. Divide batter evenly into the 12 muffin cups.

  6. Bake on center rack for 25 minutes or when a fork comes out clean.
