The absolute BEST thick & chewy oatmeal cookies. Inspired by the Archway store-bought oatmeal cookies, but homemade is always better!
Ingredients:
- 1 and 1/4 cups flour (regular or GF will do)
- 1/2 tsp baking soda
- 1/3 cup sugar
- 1/2 cup brown sugar
- 1/2 cup old fashioned oats
- 1 cup quick oats
- 1 tsp cinnamon
- 1 stick butter (vegan butter or coconut oil will work)
- 1 and 1/2 tsp vanilla extract
- 1 and 1/2 tbsp honey
- 1 egg
Directions:
Whisk together the butter (melted), both sugars, egg, vanilla and honey.
Add to the wet ingredients the cinnamon, baking soda and flour.
Lastly, mix in the oats. (Feel free to add chocolate chips as well!)
Cover and refrigerate dough for 30-60 minutes.
Pre-heat oven to 350. Form 1 inch balls of dough on parchment paper-covered cookie sheets.
Bake one try at a time in the middle of the oven for 9 minutes; you will see the bottoms start to turn golden brown.
Let cool and enjoy! Definitely taste one while they're still warm!
