The Perfect Peanut Butter Cookie

Thick & Chewy Peanut Butter Oatmeal Cookies



These cookies can be made with or without dairy or gluten. For best results, let the dough chill in the fridge for about two hours before baking. This recipe yields about 24 cookies.


Recipe:

1/2 cup butter (could use vegan butter or coconut oil)

1/2 cup peanut butter

1 egg

1 tsp vanilla extract

1/2 cup brown sugar

1/2 cup granulated sugar

3/4 cup flour (I used Bob's Red Mill GF Flour)

1/4 tsp salt

1/2 tsp baking soda (use full tsp if not making GF version)

1/2 tsp xanthan gum (omit if not making GF version)

1/2 cup old-fashioned oats

1/2 cup quick oats

Step 1: Melt butter & peanut butter. Mix all wet ingredients and sugars together in a bowl.

Step 2: Combine all dry ingredients and mix into the bowl of wet ingredients. Add the oats last.

Step 3: Cover bowl with plastic wrap and let chill in the fridge for 2 hours.

Step 4: Remove dough from fridge and pre-heat oven to 350.

Step 5: Form 1-2 inch balls of dough on a parchment paper-lined cookie sheet.

Step 6: Bake 8-9 minutes until the edges just start to brown. Allow to cool and enjoy!
