Thick & fudgy brownies with s'mores in every bite!
For GF version: use GF flour (I use Bob's Red Mill) and GF graham crackers (I like Pamela's brand).
For dairy-free version: substitute coconut oil or vegetable oil for the butter (*This typically creates less fudgy brownies with a more cake-like texture). Also use a dairy-free milk (almond, oat, coconut) and dairy-free chocolate chips (I use Enjoy Life brand)
Ingredients:
2 eggs
3/4 cup granulated sugar
2 tbsp milk
2 tsp vanilla extract
1 stick of butter
2 tbsp coconut oil
1 cup chocolate chips, divided
3/4 cup flour
2 tbsp cocoa powder
1/4 tsp baking powder
1 pack of graham crackers (6-8 full graham crackers)
Mini marshmallows
sprinkle of salt
**If doing GF, add 1/4 tsp xanthan gum
Step 1: Preheat oven to 350. Line a greased 8x8 baking dish with graham crackers along the bottom
Step 2: Melt butter, oil and 1/2 of the chocolate chips in the microwave
Step 3: Stir melted mixture in a bowl. Mix in the eggs, milk, sugar and vanilla.
Step 4: Add in all of the dry ingredients. Fold in the remaining chocolate chips and crush the remaining graham crackers into the mixture.
Step 5: Pour batter into baking dish over graham crackers (I like to crush some over the top as well). Bake for 25 minutes.
Step 6: Remove pan from oven and cover with mini marshmallows. Return to oven for an additional
3-5 minutes. (If desired, switch oven to broil for approximately 2 minutes, but keep a close watch!)
Step 7: Allow to cool completely. Place in fridge for 30 minutes prior to cutting the brownies. Enjoy!
